As a native Texan few foods speak to my soul as much as the beautifully balanced bright and spicy flavors of Tex Mex. As we began to watch our budget I found myself craving the perfectly balanced dishes from my favorite restaurants and finally decided enough is enough I can recreate these on my own!
First up was one of my favorites : Tomatillo Enchilada Sauce!
This sauce is the perfect addition to your homemade enchiladas and is delicious enough to serve as tomatillo salsa alongside some tortilla chips.

Ingredients
- 3 lbs of Tomatillos ( Tips for selecting ripe tomatillos)
- 3 Jalapeños
- 1 Tbs Minced Garlic
- 1 White onion
- 1 Lime
- 2 Tbs Olive Oil
- 3 Tbs Fresh Chopped Cilantro
Prepare The Tomatillos and Vegetables
To prepare the tomatillos first peel off the husks of the tomatillos and twist off any visible stems.
Place the green tomatillo fruits into a colander.
The tomatillos will feel slightly soapy, this is normal. Rinse extremely well in the colander until they no longer feel soapy.
Cut the tomatillos into quarters and set aside.
Dice the onion and the three jalapeños.
hint: Depending on the heat preference of your family you can adjust the amount of jalapeños up or down.
Turn The Heat Up
Place a large pot or skillet over medium heat. Drizzle the bottom of the pot with the 2 tablespoons of olive oil and add the 1 tablespoon of garlic.
When the garlic is fragrant, add the diced onion and jalapeños and sauté over medium heat until the edges of the onion are wilted.
Add the quartered tomatillos.
Sauté over medium heat until the tomatillos are softened and wilted (about 15 minutes).
Blend It Together
Let the mixture cool for a few minutes then add the sautéd tomatillos and vegetables to a blender or a food processor and blend until smooth.
Add the 3 Tbs of chopped cilantro and the juice from one lime then blend again.
Serve the Tomatillo Enchilada Sauce
Pour over enchiladas, drizzle on tacos, serve with chips, and ENJOY!

A slightly spicy, tangy, and beautifully balanced tomatillo enchilada sauce. Perfect for enchiladas, tacos, or even to serve with tortilla chips.
Ingredients
- 3 Lbs Tomatillos
- 3 Jalapeños
- 1 Tbs Minced Garlic
